Raise your hand if you’ve had one too many slices of pie the past couple of days…
You know I did- the sweet tooth queen.
I love love love Christmas time so much. The whole month of December is so cozy and everyone is extra cheery. I wish it was like that all year long. In all honesty, I can’t believe it’s already over. So much hype and build up and it’s all over the next morning, crazy and a little sad if you ask me. No more Christmas music, December 26th is a sad day in this house.
I’m glad there’s another holiday not so far away. I thought I’d make these kale chips for those like me who ate way more sweets than recommended. Those who want to start their new year off right. (Until Valentine’s Day CHOCOLATE, right?!?!)
These little babies satisfy my salty/crunchy hankerings too. Instead of stuffing my face full of potato chips I go to these. Seriously, kale is a superfood and surprisingly filling! Little Lady stuffs her face with these things and I’m not about to stop her.
First, rinse off kale and de-spine the leafy greens.
Cut or tear into roughly potato chip size. Spray with olive oil and sprinkle with sea salt. I like to use this mister to evenly coat the leaves.
Bake at 350° for 10-12 minutes or until lightly crispy. Enjoy!
