Eggs in Heaven.. I think the name suits it well, Mountain Man brings me these in bed when he wants to suck up.
I feel like most breakfast recipes are the normal scrambled or sunny/over variation, maybe even an egg casserole. However….Don’t get me wrong, I like em’. A LOT. But we all need to change things up a bit, don’t we?
Eggs are so versatile from baking to whipping….Really, they are. These eggs in Heaven are super fluffy, like a cloud. It’s like a breakfast meringue, kinda? And who wouldn’t want that when you haven’t even woken yet. I yolk you not….
Mountain Man calls these eggs in Heaven but I think most people call them eggs in a cloud. I think it sounds better when they’re in heaven and it’s like eating an egg marshmallow anyways. An eggmallow, if you will.
With Little Lady refusing to nap these days, everything has to be fairly quick and easy, for my, I mean our, sake. This momma misses her breaks and with this toddler? She’s all over the place!
Separate the eggs yolks from the whites. Make sure to keep the yolks, you’ll need them later. Mountain Man likes to put them in shot glasses because it makes it easier to place later.
Whip the egg whites until just past soft peaks.
Use a spatula to place egg whites onto an oiled oven safe pan.
It should look like a mound with a well for each yolk like how you would fix your mashed potatoes for the gravy.
Sprinkle with red alaea salt. Broil on high until desired yolk consistency. The longer you cook the yolks the darker your egg whites become.
I hope you enjoy these as much as my family does. Ham, bacon, or sausage patties really completes it. A bit of buttermilk biscuit sells it to your soul.

- Make wells for each egg yolk in the whites and place the yolks gently inside.
- Sprinkle with salt.
- Broil on high until desired yolk consistency.

I cook eggs a lot, and in many different ways, but I have never heard of nor seen these before. I will try them tomorrow and let you know what I think!
