I often say that I’m going to start eating healthier. Mountain Man usually smirks when he hears this because he knows I’ll be scarfing down chocolate by early afternoon. It’s what I do..at least it’s dark chocolate?Fortunately, I’ve found that if I get a little chocolate in the morning I’ll be less likely to indulge in sweets later. I can do it thanks to this coffee smoothie.
Do you have to have a morning cup of coffee? I usually do, especially more now that Little Lady is toddling around and it takes rocket fuel to keep up with her. It’s a bit weird to drink a hot cup of coffee then drink an ice cold smoothie. It’s just not right. Combining the two is perfect harmony for me and I fix the coffee in advance.
I’ve frozen the coffee for the smoothie into ice cubes. We use an AeroPress to make coffee and then pour it into this ice cube tray. I love my AeroPress. Two batches of coffee from an AeroPress will make an entire tray. If you are using a regular coffee pot, it should make more than enough.
This smoothie has ~15 grams of protein which keeps me full and energized until lunch. The best part is I’m not craving anything sweet either.
Here’s a little bit of the recipe broken down:
1/4 cup of hazelnuts- 5 grams protein
1/2 cup Greek yogurt- 8 grams protein
2 tablespoons cocoa powder- 2 grams protein.
The best part is you throw everything into a blender and you’re done! No bowls or spatulas to wash. It’s my kind of breakfast.
Ingredients
- 6 frozen coffee ice cubes
- 1/4 cup raw hazelnuts
- 2 tablespoons cocoa powder
- 1/2 cup plain Greek Yogurt
- 1/2 teaspoon vanilla
- 1/4 cup almond milk
- 1 tablespoon honey
Instructions
- Toss everything into a blender and blend until smooth.
