You know those times when all you want is a nice warm home cooked breakfast…it’s too far to mom’s but you’re definitely not in the mood to make a full breakfast? Ya, this is the next best thing and is what Mountain Man makes when he’s had too much to drink the night before. Poor fella. It’s greasy, full of carbs, easy on the stomach, and oh so good!
I’m always on the hunt for quick and hearty breakfast dishes. I could eat breakfast all day long if I could but it’s hard to find recipes that don’t take all morning. I feel like most dishes take longer than dinner!
This breakfast is basically a quick hash brown casserole that you can slice. It has all the best breakfast ingredients in it- potatoes, eggs, sausage…. You can also add veggies if you like too! (Mountain Man just made a yuck face, but he puts mushrooms in it sometimes.) Really, add whatever you want, like an omelet except ten times better.
POTATOES!!
Line the bread pan with shredded potatoes. Bake at 375 for 30 minutes or until just browning.
Add eggs and sausage.
Toss cheese on top and bake for another 20-30 minutes.
Top with greek yogurt and green onions if desired.
Ingredients
- 6 red potatoes, shredded
- ½ pound browned sausage
- 4 eggs
- ¼ pound cheese
- salt and pepper to taste
Instructions
