You guys!! I’m super super excited this year for Christmas! Last year, Little Lady was so young that I felt this year is would be her first Christmas. She’s just more aware of her surroundings now. Christmas really does take the cake when you have little ones. I really wasn’t into the Christmas spirit before but I’m definitely all in now!
Since Christmas is coming up and I know lots of you set out dessert trays I thought I’d give you this Sea Salted Caramel recipe! It’s easy to make and doesn’t take much time, it’s perfect for those busy holiday baking days. You also may wrap these in cute packages to send as gifts or use as stocking stuffers! It’s win win, you must give these a try!
This recipe can either be soft and chewy or you can turn them into hard candies. I actually like to do both. I will pour about half of the mixture out to set aside and continue to cook the rest to make hard candies.
A super simple holiday treat that doesn’t add stress to the kitchen is the best. Seriously, dump all the ingredients into a pan (except the salt) and stir until melted.
Once melted, bring to a boil and continue to stir constantly. This is where you can vary on length of cooking. If you would like to have soft caramels, cook until just thickened. If you would like to have caramel hard candies keep on cookin’.
You can test how hard your caramels will be by doing an “ice bath” test. Basically a small bowl of ice water, when you think they’re done, drop a bit of it into the bath. If the mixture hardens up to where you want it then you’re done! If not, continue to cook and test/taste until satisfied.
Once satisfied, pour into a parchment lined dish (9×13) and let cool for a few minutes, sprinkle sea salt on top, and continue to cool.
Cut caramels into rectangles and wrap if you’d like!
Tip: If you want hard candies, cut your caramels up before they fully harden so it’s easier.

Ingredients
- ¾ cup sugar
- ¼ cup brown sugar
- ½ cup butter
- 1 cup heavy cream
- ½ teaspoon vanilla
- 1 teaspoon sea salt
Instructions
- Combine all ingredients except salt in a saucepan.
- Cook on medium heat, stirring constantly until melted.
- Bring to a rolling boil and stir constantly until done. (Use the ice bath test)
- Line a casserole dish with parchment paper and pour mixture in.
- Let cool for a few minutes and sprinkle sea salt on top.
- Let cool to room temperature.
- Cut caramels into pieces and wrap in parchment paper.
